ORANGE-PINEAPPLE YAMS
Cooking by the Book
2 cups orange or apple juice*
4 to 6 yams or sweet potatoes (baked whole in skins)
1 cup pineapple juice*
Few drops of maple flavoring or syrup
3 Tbsp crushed pineapple tidbits
1 cup Pecan halves or chopped, or dried or fresh cranberries
3 Tbsp cornstarch
Peel and slice baked yams/sweet potatoes. Layer slices of yams/sweet potatoes in casserole dish. DISSOLVE cornstarch in juices. Bring mixture to boil and continue to boil for 1 minute over medium-high heat, stirring constantly. Pour sauce over potatoes. Sprinkle with Pecan halves or chopped, or dried or fresh cranberries. Add crushed pineapple. Bake at 350 degrees for 45 minutes. YIELD: 6 servings
*(Can use apple juice concentrate and pineapple juice concentrate if you prefer).
