CRAN-APPLE-WALNUT YAMS

Ingredients:
4 medium yam (1-1/2 lbs), peeled, cut into ¼” slices
2 apples (Granny Smith or Golden Delicious), cored, thinly sliced into ½ rings
½ cup dried cranberries
¼ cup Agave or ½ cup brown sugar
3 Tbsp Earth Balance or Smart Balance butter spread, melted
¼ cup chopped walnuts or pecans
½ tsp cinnamon
Directions:
Spray a large casserole dish with non-stick cooking spray. Make 4 rows of sliced yams. Then place the apple rings in between rows of yams. Sprinkle cranberries over yams and apple slices along with nuts. Then sprinkle with Agave or brown sugar. Melt butter spread and then add cinnamon; let cool a couple seconds then drizzle over top of yam dish. Cover top of casserole with heavy duty foil. Bake 450 degrees for 25-30 minutes or till done. Serves 5-7
