CASHEW AND PEAS IN A GINGER CURRY
1/4 cup oil
2 Tbsp tomato paste
1 cup chopped onions
2 cups raw cashews (soaked in
2 cups tomatoes hot water for about 10 mins.)
1 Tbsp ginger
3 cups frozen peas
3 tsp Malliga Masala (or any other curry powder)
1/2 cup chopped cilantro
1 cup water 2 tsp brown sugar salt to taste
Saute onions in oil. Add tomatoes, ginger and Malliga Masala. Stir. Cover and cook on med-low heat until tomatoes are down. Puree with water and return to stove. Add rest of the ingredients.
Stir well.
Simmer for 10 minutes.
