PINEAPPLE ICEBOX CAKE
Crust:
2 cups walnuts or other nuts
1 tablespoon vanilla
2 tablespoons agave or choice of sweetene
Process ingredients in Food Processor. Spread in a glass dish.
Filling:
1 1/2 cups cashews
1/3 cup agave
1/4 cup coconut oil - melted
1/4 cup water
3 cups chopped fresh pineapple
Blend cashews, agave, oil; add water as needed to make this creamy.
Place in a bowl. Add pineapple. Mix well. Spoon filling into the glass dish.
Freeze for 2 hours to set. Remove from freezer and top with reserved cup of crust.
