NO-BAKE LEMON COCONUT BARS
Ani’s Raw Food Kitchen Cookbook
1 cup almonds, raw chopped
1 1/2 cup pitted dates, chopped in food processor with almonds until finely chopped
and mixed
1 tsp. vanilla
1/2 tsp. sea salt
Zest of 1 lemon
2 tbsp. of juice from lemon
1 cup dried shredded unsweetened coconut
In food processor, chop almonds into small pieces. Use some of this nut powder to flour the
bottom of 9-inch square baking pan. In mixing bowl, mix remaining ingredients, including the remaining chopped almonds. Use hands to get everything combined. Press into a baking pan and chill for a couple hours until firm. Then cut into squares.
